Crispy Fried Eggplant

    Recipe by Dugger: Crispy Fried Eggplant/saved
    One minute a side over medium/high heat made a good browning .
    Good flavor. Spooned a dollop of pasta sauce over them.
    Eggplant was a little difficult to peel. Kind of corky. Wonder if it would be OK with the skin on.
    Made in batches and had to keep adding oil, as the eggplant kept sucking it up.
    Plenty of egg wash left over.
    Mother says nom yum.

    Love eggplant. I would suggest dredging in flour before egg mixture. It acts as a barricade for absorbing all that oil as eggplant is just like a sponge....IMHO

    When I was a kid, my mom would make us eggplant like this - fried. I didn't like it and would drown in it ketchup. I haven't been brave enough to try it since. Pasta sauce sounds good. It sure looks tasty anyway! :)
