Curried Egg Salad

This quick-to-mix egg salad with plenty of flavor made a great sandwich and fit into my hurried lunch break from work. It would be equally as good eaten with crackers, pita chips, etc.

Was only using 2 eggs so had to dramatically cut the rest of the ingredients. I didn't have time to figure out measurements, so just ad-libbed and put in the amounts that seemed right. Also added a tiny bit of honey to the mix, and used curry POWDER.

It's quick to make as long as the eggs cooperate and peel easily. Fortunately, mine today did but some of them are pretty stubborn especially when you're in a hurry!

I really like egg sandwiches. Im not a big fan of curry, though. And I HATE when the hard boiled eggs wont peel. My dog, however, loves it. Thats because I dont have the patience to sit there and try to remove the shell. So pup gets a "crunchy on the outside treat". Pretty pics GK

This post was a bit back there but I guess I've been meaning to make this for a month now, and finally got too it! I love curry and it worked so good in this!! I used madras curry powder and actually added a bit more than the recipe called for, probably doubled up. I added some chopped green onions on top and it was a perfect lunch! Added the ol' pic ;)
