How to make it

  • Boil eggs as you would hard boiled eggs. Then cool down in cold water. I like to tap the cooked egg shells against the side of the saucepan while running cold water over them.
  • In a bowl, finely chop eggs. Mix in mayonnaise, lemon juice, mustard, curry paste, pepper and salt. You can also turn this mixture into deviled eggs and pipe the yolk mixture into the egg halves.
  • Serves: 1-2/3 cups

    I made this for a BBQ but sliced the cooked eggs on a plate then dribbled the dressing over with chopped parsley sprinkled over the top a great success with everyone.

    Loved it! Curry is one of my favorite spices. I've added it to chicken salad several time but never to egg salad so it was a nice change. Added a bit of green onion to th final product. More here Curried Egg Salad
