Danish Aebleskiver

    OK, who's got an aebleskiver iron??? If you don't, they're available online, and really quite inexpensive. With one in hand, you can make these delicious, puffy, filled or unfilled little Scandinavian delights! I've had my pan for many, many years, but hadn't pulled it out of the dark recesses of my pantry until I came upon Chris' recipe and had a craving to try them again...I'm so glad I did! These are tasty little bundles (featured on FoodNetwork awhile back). I filled some with blueberry jam, but my grandmother always used a bit of applesauce... they are just as good plain with some butter and syrup on top, or sprinkled with fresh fruit and powdered sugar. I would highly recommend these to anyone looking for something new and fun for weekend brunch...they keep warm on a cookie sheet, single layer, in a 250 degree oven, while you make up the whole batch - DELISH! I'm going to be experimenting with these now that I've dug my iron out of storage...so look for more postings from me in the near future!!

    These look similar to a pancake recipe...do they taste like really fluffy pancakes?

    I also found these great step-by-step photos for making them, that informs Aebleskiver means “apple slice,” but suggests putting anything you like in the middle, such as ham and cheese, chocolate, pears, cherry jam, sausage, bacon, or bananas.
