This is an easy, delicious recipe that a few of the girls in Our Daily Dinner have made, more than once! : ) I know I have never requested the recipe be added to the group, and, since none of their comments say that they added it to IMI, I thought I would add it, as I don't see a way to search threads without clicking through all the pages...(not gonna happen. lol). So, please forgive me if this has already been reviewed in a thread here.

I made this last evening substituting fresh ingredients for the tomato, green beans and oregano. This added a cooking step as I blanched both the tomatoes and the green beans. I peeled and seeded the tomato before chopping it up. I did add some water and a touch of wine along with 1/2 tsp of Splenda to cut a bit of the acid from the tomato.
Really excellent and colorful side dish worthy of company. It made up about 3 cups for me. I'll be sharing a tiny bit of it with the old folks next door because I love them.

This was easy and very tasty! Perfect for my Greek-inspired dinner last night. I used fresh green beans blanched and left out the olives until serving b/c my beau doesn't care for them. I also mixed herb feta w/the plain. Thanks, Lori!
