Ingredients

How to make it

  • In a large skillet cook onion and garlic in hot oil about 5 minutes or until tender.
  • Add undrained tomatoes, olives, and oregano.
  • Bring to boiling; reduce heat.
  • Boil gently, uncovered, for 10 minutes.
  • Add beans.
  • Return to boiling.
  • Boil gently, uncovered, about 8 minutes or until desired consistency and beans are tender.
  • Transfer to a serving bowl; sprinkle with cheese.
  • ***NOTE***
  • Fresh green beans and tomatoes are always way better than anything canned, and I use them often. If canned is what you have (or a combination of canned / fresh) it's a great recipe to make them taste even better!

    Excellent - will definitely do this again. I found the oregano gave it a bit of a bitter taste so might add some splenda to counter that.

    I usually halve a about a cup or so of grape tomatoes, more often than using the canned.

    I made this last evening substituting fresh ingredients for the tomato, green beans and oregano. This added a cooking step as I blanched both the tomatoes and the green beans. I peeled and seeded the tomato before chopping it up. I did add some water and a touch of wine along with 1/2 tsp of Splenda to cut a bit of the acid from the tomato.

    Really excellent and colorful side dish worthy of company. It made up about 3 cups for me. I'll be sharing a tiny bit of it with the old folks next door because I love them.

    I'll be substituting in fresh green beans, oregano and tomatoes because I need to use them up but this combination of ingredients in your Easy Easy Greek Style Green Beans is a winner. Using fresh green beans I generally give them a rinse and put them drippy into a glass dish then microwave using the fresh vegetable setting. Using fresh tomatoes I won't have the liquid so I'm thinking just plain water will work fine. I'd estimate about 1/2 cup would do it and I might end up splashing a bit of wine in that pan if it doesn't look enough.

    This was easy and very tasty! Perfect for my Greek-inspired dinner last night. I used fresh green beans blanched and left out the olives until serving b/c my beau doesn't care for them. I also mixed herb feta w/the plain. Thanks, Lori!
