Sparow's Easy Greek Style Green Beans and Tomatoes

    I made this last evening substituting fresh ingredients for the tomato, green beans and oregano. This added a cooking step as I blanched both the tomatoes and the green beans. I peeled and seeded the tomato before chopping it up. I did add some water and a touch of wine along with 1/2 tsp of Splenda to cut a bit of the acid from the tomato.

    Really excellent and colorful side dish worthy of company. It made up about 3 cups for me. I'll be sharing a tiny bit of it with the old folks next door because I love them.

    So glad you liked this, Laura. Here is the link. I make this with grape tomatoes more often than the canned. Thanks for the reminder...I should nake that note, huh? : )

    I used grape tomatoes when I made it for supper Saturday night. Awesome flavor and Fred approved. It is a festive looking dish and it is very tasty. Fast fix, too.
