    Well, I had these bookmarked for quite a while and finally got around to it. I only used one hen and cooked it in my Christmas-present-to-myself new rotisserie. It was really delicious although I couldn't finish the hen. I'll have some nice leftovers. I served this with Better Mashed Potatoes and put some of the leftover herb mixture in them. I think this herb mixture would be good for rice, too.

I see from some of the comments on the Recipe page that one person took the peel of the lemon off before they put it through the food processor. Did you use the lemon peel or no? I ADORE Game Hens and this does look like a yummy recipe. Bookmarked it to try this coming year. Put me down on the wish list for wanting a Rotisserie as well. Would be so fun. I'd try rotisserie everything! :)

    Oh, thanks for the reminder, Chuckie. I did mean to mention that I peeled the lemon. For some reason that seemed like a lot of peel to me and I'm glad I peeled it.
    I think the rotisserie is going to be fun. It comes with a little basket that goes on the rods and it turns, too, so you can put salmon, shrimp, vegetables, chicken legs - whatever in it. It adjusts to the height of the food. I think you could even put a sandwich in there!
