Eggplant Fingers

    Recipe by Chefjeb: Eggplant Fingers/saved
    A nice snack or side dish or main meal if you snarf them down.
    There is plenty of breading. Buy some more eggplant and have at it.
    Tossed them in a bowl with olive oil first then breading.
    Baked for 25 to 30 minutes on a parchment lined baking sheet.
    Grab a couple more eggplant and do them up, as there is plenty of breading.
    I'm told that eggplant really sucks up the oil. So next time I may coat the fingers with flour first then the oil then the breading.. That should create a thicker bread coating.
    Also did not peel the eggplant.

    I posted the pic to Chefjebs recipe. If he's still around I may get some flack.

    I was looking at a Chefjeb recipe today wondering, if I could post a pic as well? I haven't heard any complaints from him about pics, for a long time. It is a good pic and I doubt if he will mind. BTW Do you have the damaged part of your house, all fixed up and ready for the winter yet?

    No. Still trying to get insulation in the bottom to protect the water pipes. Waiting on an estimate. I can't get in there to do the job with all these IV's hanging off of me.

    Remains to be seen. I have an infection in the bones of my foot due to an ulcer complication of diabetes. Am taking two types of antibiotics through IVs. Trying not to go the amputation route.

    It was a play on words jeans vs genes. Spelled differently, has different meanings, but sounds the same. Although it is not proven that diarrhea runs in the genes, I can testify that diarrhea does indeed run in the jeans. : (
