Eggplant Fingers Recipe
This is an easy and healthy eggplant side. Lip smacking and great for a snack or side dish.

Ingredients
  • 2 eggplants
  • Olive oil
  • 1 1/2 cups Italian bread crumbs
  • 1 cup parmesan cheese

Directions
  1. Cut skin off eggplant and slice into one half to gthree-quarter inch rounds. Cut rounds into fingers about 1/2 to 3/4 inch sticks. Coat with olive oil. Mix parmesan and bread crumbs. Roll fingers in bread, cheesemixture and place on baking sheet. Bake at 375 until golden brown.

Yum! I love to make this side and have always used zucchini. I love eggplant as well, but I have never thought to use it. Duh! Thanks for the great idea. :)

I love using eggplant this way. I use this instead of french fries along with the main meat. Good combination.

Alterations


I added to the eggplant fingers a green pepper and a garden fresh tomato cut in wedges. Love how easy it is to eat it in strips. My mother and I have eaten three eggplants this way and have three to go with no intention of changing recipes. At fifty cents apiece from Hillcrest Orchard eggplant is a great fall treat.
