How to make it

  • Cut skin off eggplant and slice into one half to gthree-quarter inch rounds. Cut rounds into fingers about 1/2 to 3/4 inch sticks. Coat with olive oil. Mix parmesan and bread crumbs. Roll fingers in bread, cheesemixture and place on baking sheet. Bake at 375 until golden brown.

    Made these the other night and snarfed them immediately-- simply, wonderful and sooo fragrant! We ate them with a simple dip of sour cream, garlic salt and parsley. Wonderful, here's a 5.

    I love using eggplant this way. I use this instead of french fries along with the main meat. Good combination.

    Yum! I love to make this side and have always used zucchini. I love eggplant as well, but I have never thought to use it. Duh! Thanks for the great idea. :)
