Eggplant Fingers

- 2 eggplants shopping list
- olive oil shopping list
- 1 1/2 cups Italian bread crumbs shopping list
- 1 cup parmesan cheese shopping list
How to make it
- Cut skin off eggplant and slice into one half to gthree-quarter inch rounds. Cut rounds into fingers about 1/2 to 3/4 inch sticks. Coat with olive oil. Mix parmesan and bread crumbs. Roll fingers in bread, cheesemixture and place on baking sheet. Bake at 375 until golden brown.

Made these the other night and snarfed them immediately-- simply, wonderful and sooo fragrant! We ate them with a simple dip of sour cream, garlic salt and parsley. Wonderful, here's a 5.
