Recipe by Sas: Eggs Benedict
Been a while since I've had this style breakfast. Lots of good flavor but I'll have to work on the technique. My eggs still had clear white around the yolk at 5 minutes. The Hollandaise sauce started to thicken then quit. Upped the element to medium without any more thickening. Used some of my home made bread instead of English muffins.

I love the ingredients of Eggs Benedict - except for the Hollandaise sauce. If I eat breakfast out, I'll order Eggs Benedict with no sauce. The waitress always looks at me as if I was nuts. :) Nice instructions for a poached egg there.

Well, ya know, now that you mention it, its been so long since I've tried it I can't remember! ha! I should probably give it a go again. Except my waistline doesn't need more sauce. Maybe I shouldn't. :)

Haha! I actually had eggs benedict for the first time in Vegas earlier this year! It was good! Yes I do agree it's probably not the lowest in fat either.....lol!
