    Recipe by 5thsister: Ever So Slightly Sweet Potato Cashew Bake
    This is a nice sweet potato dish. I doubled the brown sugar and butter. Ground up the cashews 'cause we are getting long and soft in the tooth anymore.
    Used home grown sweet potatoes that have been in the root cellar from our garden last year. Speaking of our garden, It's about time to start growing some more potato slips for this years garden.
    Used a 7x11 casserole dish to bake.

    I'd love to have a root cellar. I even have a book on how to properly root cellar things. I don't know if I will ever have a root cellar, but I'm ready with the book. :)

    A little white lie. I use an ice chest. It's big roomy dark and cool. For all intents and purposes it's a root cellar.

    I keep it in my bathroom which never gets above 60F. No ice, just the taters in the chest. Sweet potatoes need a dark warmish humid environment for 4 weeks after they are dug so they may cure. It toughens up the skin and makes them sweeter. Then a cool dry dark place afterwards for storage.

    Oh, and don't wash the dirt off the potatoes. Just brush it off when they dry. They are ready to be dug 4 weeks after the first couple of flowers appear. Make sure you dig them before the first frost. I grew mine in a bail of wheat straw with a bag of miracle grow poured on top. That gave it a nice loose medium to grow so as not to cramp the veggie. It makes a good soil conditioner the following year when the straw starts to compost. I'm building a raised frame for this years crop.

    The sweet potato likes the heat and needs 80F to start producing slips. Place an old small wash basin on a heating pad. Lay down an 1" layer of sand or potting soil mixed with a seed starting soil. Slice the potato in half long wise and place them on the soil cut side down. Lay down another layer of growing medium but not to completely cover the potatoes. Keep moist. Potato will start growing slips and roots. When the slips are 6" long or longer, cut or snap them off the potato and place them in a glass of water so they will grow roots on the slips. When warm enough outside transplant them to where they will grow.

    You know, now that you mention ice chest, I think I have heard of people burying those in the ground to use as a kind of root cellar. It seems like it would work especially if you buried it in a shady spot. Like maybe on the north side of the house or something. Thank you for all the information, pso. Sorry about the hijacking. :(
