    Skillet Shrimp And Orzo

    Amazing flavour! It was my first time cooking orzo this way and became an instant fan.
    I don't have a skillet that I can put in the oven so I just let the orzo simmer until the liquid disappeared and then covered the pan with foil and let it rest for 10 min. It worked fine :)
    I did add sugar snap peas, because I had some in the fridge with today's expire day. Added them at the same time as the shrimp. Also had to sub the basil (didn't have any) with dried parsley. I bet basil is much better for this recipe.
    I bought 4 pounds of shrimp on my last visit to Billingsgate market and froze them in 1 pound batches. Defrosted them, peeled them (heads and body) and took the chance to make shrimp broth to freeze. So! This was definitely a productive dinner cooking :)

    I always keep lots of shrimp in my freezer, too. I buy it when its on sale. I have three pounds in my freezer right now. :)

    Yours looks delicious Ana! That is such a cool way to cook orzo :) I too buy a ton of shrimp and freeze it in 1 lb. bags. I like to double bag the fresh shrimp and then fill the bag with water to cover the shrimp and then freeze. Supposed to keep them tasting fresh? Been doing it for years and seems to work great!

    ML2C portuguese do that exact freezing with water technique with sardines so when defrosted they taste exactly as fresh. Never occurred to me doing the same with shrimp. Will definitely try that next time I buy shrimp to freeze. Thanks for the tip ;)

    I remember my dad doing the water freeze with his fresh caught trout. I can't remember how it worked out but many people use that method.
