Fresh Zucchini Pasta

    Recipe by Cheftom: Fresh Zucchini Pasta
    A nice change from the standard marinara sauce.
    Lemon flavor shines through.
    Didn't know if the seeds of the zukes were to be added, so shaved the zukes down to the seeds and tossed. Supposed I could have chopped them up. It's difficult holding on to the shaved zuke once you get down to the seeds.
    Found a discount on 'shrooms so added a half pound quartered in with the zukes and sauteed.
    A little more oil than I'm used to but ate every drop.
    Only used a half teaspoon of the crushed peppers.
    Recipe says 10 oz. pasta. We don't roll that way here. Pasta comes in one pound containers. I'm not about to split up a box that way.
    All came out exactly to spec, even the picture.

    mushrooms sound great in this... and I LOVE lemon, so there's a no brainer.

    Also, I would assume you'd not include the seeds, too...
