    Flash Bubble And Squeak
    Made a version of Joce's Bubble and Squeak
    Used Joce's suggestions and ran with it. It was very very good and as Joce said, subject to interpretation....mine did not brown as lovely as hers did in version #4, but that is what I was aiming for next time....browned. And I will make a cake form eventually...like her version#1 with the egg on top!!!!!
    I had planned on making mashed potato cakes with kale, coated with panko and fried for Hubby's dinner. Ran out of energy. This is how I did it:
    6 yukon golds, scrubbed, unpeeled
    1 large sweet potato, peeled
    salted water
    1 large leek, white and pale green only chopped
    4 huge handfuls of cleaned curly kale...remove tough stems
    6 slices of bacon, diced
    3 tbsp of butter.

    Cubed potatoes and sweet potato, add to salted water and bring to boil, simmer 10 minutes.
    when partially cooked, add leeks and kale, cook another 10 minutes over slow heat.
    Drain well.
    In a fry pan, cook chopped bacon until crispy and fat is rendered. Drain on paper towels.
    Dump out the grease....add butter to pan,. Put the potatoes, sweet potato, the kale and crumbled crispy delicious bacon back in the pan and mash gently with the potato masher. Turn up heat and let the butter bubble through the taters and greens. Serve when piping hot.

    Beautiful pics of the veggies! I have never done them with kale or bacon. LOL Isn't everything better with bacon and butter.:-) I don't know why they didn’t brown? Possibly the extra moisture from the leeks and kale? Thanks so much for the great review and including this in your Brown Onion Gravy With Grilled Sausages Post which is such a delightful comfort dinner to me.:-)

I had drained the potatoes/kale/leek very well. I could have turned up the heat a bit too to facilitate the browning. But boy oh boy, did I hit a homerun with the onion gravy. He swooned. He licked the plate. He ate the Flash Bubble And Squeak leftovers fried up with an over easy egg this morning and declared it "Good" a veggie bacon hash to start his day.
