Gourmetana's Ricotta Stuffed Soft Bread!

    Ricotta Stuffed Soft Bread/saved
    This recipe was just posted this past week but it caught my eye immediately. I was making Pasta with Fresh Tomatoes and Basil for dinner last night and knew this would be the perfect accompaniment!
    I had a Food Processor disaster while making it. Gourmetana's food processor must be bigger than mine (mine's a 7 cupper) and I do admit to ignoring my 'fill line' in the bowl! :) So I had liquid pouring out all places. Decided to mix the batter in two batches and that worked a lot better!
    I didn't have any fresh parsley on hand but I did have basil so I used that and I really liked it. I'm not a huge sundried tomato fan but they were good and certainly colourful in this recipe and I love olives!
    My Bread looks a little denser than Gourmetana's. Perhaps I didn't cook it quite long enough although it sure did get nice and golden on the top and I did actually cook it for 45 minutes. Or perhaps it was due to my food processor mishap! Either way this recipe was amazing. It makes A LOT! And I was pleased that she said it freezes well!
    I will totally make this again. The dough almost reminds me of the flavour and somewhat the texture of yorkshire pudding...with an Italian twist. Super yummy! Thanks Gourmetana!

    It didn't take that long to make ML2C. It was easy to put together. It'd be nice in a Brunch offering too!
