Hamburger Buns

    Needed hotdog buns and this recipe piqued my interest because of the amount of yeast.
    Three packets of yeast says the baker wanted to make the buns in a hurry.
    I used rapid rise yeast to help the rising along.
    Kneaded in a food processor. Had 3/4c water left over.
    Let rise for 15 minutes. There was good oven spring.
    Baked for 15 minutes to get a nice golden brown.
    I was really after a hoagie or kaiser type roll for making sub sandwiches.
    These look like they might work. For a larger roll, the dough can be cut into 8 pieces instead of 12.
    Recipe works well, if you're in a hurry to make rolls, with all the yeast but I think I'll look for a more standard roll recipe to cut back on the expense of the yeast per batch.
    YES the buns stuck to the baking sheet. Read the instructions wrong. Definitely need to grease the pan or put down some parchment paper. Corn meal by itself doesn't cut it.

    Taste is OK although not as airy as a standard bun. Suppose that's from the quick rise. Painted the tops with an egg wash. That's what you are seeing as a little shiny that makes it look firmer.

    Chefjeb has a nice bun recipe. This one has a yeasty belch a couple hours later. Still going to use them for meatball subs. Just got back from the store with the rest of the ingredients.

    We're all OK Val but there is damage all around. It's amazing to see the destruction when we cross one of the many storm tracks while driving. We had a debris cloud come over us and are still picking up debris from our property; insulation, foam, wallboard, thin planks, shingles, wallpaper and the sort. Makes me sad for the soles they belonged to whenever I run across another piece of evidence of that day.
