I cut this recipe in 1/4 to try and make it for 1 serving. I did use a whole carrot in the soup, but it was very skinny and small. I didn't have rye bread so I used sourdough and used Swiss cheese. This entire meal is SO GOOD! I was so worried that the soup would be tart from the canned tomatoes but I think the carrot or either the cream (or both) may have mellowed that out..by the way I used 1/2 1/2 which was perfect. My daughter and I split the sandwich (she wouldn't try the soup) and I could only eat half the soup, so I saved the rest for lunch the next day :) Very filling!

Believe I'll make this too. It'll give me a chance to make a loaf of bread and I'll throw in a little rye flour.

That is a nice, thick looking soup! Sourdough and Swiss sounds wonderful.
I can't wait for homegrown tomato time!

    Good stuff Maynard!
Made a loaf of bread Simple Brioche Loaf to go with for the grilled ham and cheese portion. And threw in a half cup of rye flour.
Needed no seasoning. Used dried basil from the pantry.

I too used dried basil, my little basil plant was just big enough to get the little garnish I used :) That brioche looks good, never made it from scratch. Your picture is great!
