Homemade Tomato Soup And Grilled Ham And Cheese Sandwich

A very good Tomato soup for these cold Ohio winter days.
Ingredients
- For Soup shopping list
- 1 onion diced fine shopping list
- 1 carrott diced fine shopping list
- 3 T. butter shopping list
- 2 28oz cans diced tomatoes with liquid shopping list
- 2 C. chicken stock or broth or veggie stock shopping list
- 1 C. heavy cream you can substitue milk if you prefer shopping list
- basil to taste shopping list
- salt and pepper to taste shopping list
- For Sandwich shopping list
- 8 slices of bread your choice( a good hearty rye works real well) shopping list
- 8 slices of good quality deli baked ham shopping list
- 8 slices of swiss or gruyer cheese shopping list
- butter softened to spread on sandwich shopping list
How to make it
- For Soup
- In a heavy stock pot melt butter and soften veggies
- Pour tomatoes and liquid into pot turn heat to med-high flame and cook till most of liquid has evaporated
- With an emersion blender blend soup till smooth ( you can use a regular blender or food processor)
- Add stock and reduce heat to a simmer season to taste
- Allow soup to simmer for 20 min add cream and heat through
- For sandwich
- Lay out your bread and build your sandwich with
- 1 slice of cheese topped with 2 slices of ham and topped with the addtional slice of cheese
- Butter the outside of bread and grill over med heat till golden brown and melted.
- Serve with the hot soup
- For an added kick add a dollop of sour cream to each soup bowl and garnich with a basil

Oh, yum! So even when you are posting a soup recipe, you have to throw in a sandwich! LOL. The soup sounds different and delicious, and I think it would go perfect with that grilled cheese sandwich!

Oh that does sound like it will warm my toes in this never-ending winter we are experiencing! I'm lovin' the soup recipes these days, and would love to make up a batch of this, along with the hot grilled sandwich...almost makes winter bearable!!
