Homemade Tomato Soup And Grilled Ham And Cheese Sandwich Recipe

Ingredients

For Soup

1 onion diced fine

1 carrott diced fine

3 T. butter

2 28oz cans diced tomatoes with liquid

2 C. chicken stock or broth or veggie stock

1 C. heavy cream you can substitue milk if you prefer

basil to taste

salt and pepper to taste

For Sandwich

8 slices of bread your choice( a good hearty rye works real well)

8 slices of good quality deli baked ham

8 slices of swiss or gruyer cheese

butter softened to spread on sandwich

Directions

For Soup

In a heavy stock pot melt butter and soften veggies

Pour tomatoes and liquid into pot turn heat to med-high flame and cook till most of liquid has evaporated

With an emersion blender blend soup till smooth ( you can use a regular blender or food processor)

Add stock and reduce heat to a simmer season to taste

Allow soup to simmer for 20 min add cream and heat through

For sandwich

Lay out your bread and build your sandwich with

1 slice of cheese topped with 2 slices of ham and topped with the addtional slice of cheese

Butter the outside of bread and grill over med heat till golden brown and melted.

Serve with the hot soup

For an added kick add a dollop of sour cream to each soup bowl and garnich with a basil

Oh, yum! So even when you are posting a soup recipe, you have to throw in a sandwich! LOL. The soup sounds different and delicious, and I think it would go perfect with that grilled cheese sandwich!
