    My father has been sick this past week and although he feels better, he didn't quite feel up to our family Christmas lunch today so I am home with my doggies and kitties. I chose to make a nice lunch to treat myself. This was good but I found the noodle to shrimp ratio kinda high for my taste. My Chinese egg noodles packet was 10 ounce but I think I guessed pretty close to what 8 ounces were. I found this hard to stir. The noodles absorbed the oil pretty darn quickly. Still - it was good. It definitely can use some chili heat of some kind or another. I didn't have fresh ginger. Read online that 1/8 tsp of powdered equals one tablespoon of fresh so that's what I did. My shrimp were 16/20 and they took about five minutes to cook. The noodles got kinda mushy after cooking for so long. I assumed they needed to be cooked first. ??

    I don't know why the noodles were a bit mushy..are they the soft Chinese noodles or dried? There seem to be, to me anyway, so many types of Chinese noodles! Sorry I'm not a noodle expert and not much help!

It's the stuff that comes in a clear jar with a green cap, has a white outline of a rooster on the label, and says Tuong Ot Toi Viet Nam in white letters on the front. You can get it in a small 8 oz. jar or larger.

    They were dried noodles, Marie. I think there may be soft ones out there, but I don't think I can get them here in Ukiah. The shrimp were tasty though. The sauce was good.
    I have some of that garlic chili sauce, Bakerme. I used it on something but I can't remember what.
