Honey-Orange Dijon Chicken

    Honey Orange Dijon Chicken,
    by Mrpiggy
I doubled the sauce but wish I had doubled it again! I could just eat it alone over rice for my whole meal. :)

Instead of using OJ concentrate, I did as suggested and used twice as much orange juice plus chicken bouillon seasoning instead of broth. And, of course, a little more honey like Frankieanne.

I must have coated the chicken with more cornstarch than necessary, because I didn't have much left in the plastic bag, nor did I need to add any more to the juice.

Plated it with broccoli stir-fried with garlic, red pepper flakes, and soy sauce.

For sure will make this again. :) But Mr. P, why is there a comma at the end of the title in your original recipe post???

Thank you for trying this and the great review, GK. Im glad you liked it. It is my favorite chicken dish and I make it quite often. And its healthy too : ) I always double the sauce when I make this, and it also seems there is never enough. I just dont have a skillet large enough to triple it : (

And as for the comma. Hmm. Maybe I was thinking..........."more to come"? : P You must have a patent on that natural light stuff, huh : )

I ate leftovers tonite by cutting the chicken in small pieces, making more sauce (1/2 cup orange juice, 1/2 tsp chicken seasoning, 1/2 tsp honey and 1 Tblsp Dijon), heated the chicken in the sauce (no extra cornstarch needed, there must have been enough on the chicken to thicken it nicely), and ate it over rice - garnished with snipped chives. I almost think I liked it the second time around better...but that was only because there was MORE SAUCE. :) I put my photo up on your recipe page, Mr. P - and I barely made the natural light deadline - it's getting dark earlier and earlier now!

I really like the look of it all cut up. I never thought about doing that. Great picture, as always, GK. With it cut up I would need even more sauce. Now I want to make it : )

So I tripled the sauce on this and it was perfect for four servings! Orange yumminess! Too late I realized I was out of cornstarch so I used flour in its place. Worked well! Great flavor! I served over white rice with a side of asparagus and it was perfect! Thanks Mr. P!

Im glad you had a chance to make this ML2C. And thanks for adding the great pic :) Asparagus sounds great with this. I LOVE that stuff....... :) I made this last Friday. I had a piece left over and no made rice so I was trying to think of something to do with just 1 left over, Someone suggested that I make a Quesadilla out it. I did, I sliced it up and added sliced cream cheese. Just those 2 ingredients. That was really good. Who woulda thought.

Well, I finally got around to making this and am so glad I did! The sauce was amazing, so flavorful..we both just loved it!!! I didn'n have concentrate so used regular OJ, I didn't measure the amount, just added until the constincency was good...I doubled the sauce as well (as per Miss Frankieanne:) ) I also used large chicken tenders and served over brown rice. Thanks Mr. P for this awesome recipe!!! I added my pic:)

BTW, I have a Meyer lemon tree and was wondering if lemon juice (slightly sweetened) would work in this..I might have to try it just to see!

NP, Im very happy that you guys enjoyed this. Even after all the chicken dishes Ive tried this is still one of my favorites. I have also used juice in place of concentrate. I just sub the juice instead of chicken broth. I add a cup of OJ and a bullion cube.

It's a baby still but we have gotten about 15 of them this year/season and we would wait about a 3 days a piece to pick them, and man do they last a long time in the fridge for us!! I think the last one I used had been in there a month almost and it was still good!!! Ours does not produce a couple times though...just once....maybe because it's young....

On the tag we saved when we bought the tree years ago, it said they produce a couple of times a year..now, I might have a dwarf Meyer lemon tree..It needs to be re-potted into a larger pot..maybe that's why it's so small!?!!
