Excellent, classic gingersnap cookie... couldn't be much easier to make and smells dangerously good while baking... I will make a double batch next time. If you want a softer, chewier ginger cookie try cutting the slices a little larger and for crispy cookies aim for a consistent 1/4 inch slice... they bake fast!!!
