This was exactly what I was looking for! I had all the ingredients except the Italian diced tomatoes, so I used diced tomatoes with onion and garlic, and added a little more Italian seasoning to make up. Used only about 3/4 cup of dried great northern beans because I thought the 1 1/4 cup would be too much once they were cooked up. Used homemade beef stock and upped the amount to about 2 1/2 cups for our taste. Loved the spinach in this. Very flavorful, hearty and full of vegetables!
