Italian Wedding Soup

    Found this recipe doing an ingredient search for parmesan rind (saw I've had it saved for a couple years! :) SO GOOD! Lot's of good healthy green veggies in this so of course I loved it :) For some reason the smell of the soup cooking was not the greatest. Funny, because I have cooked with all these veggies before and the smell never bothered me. Maybe it was the broccoli simmering away?? Anyway regardless it taste terrific :) I did make a few changes...didn't want to use red chili flakes, too spicy for the kids, so I used a dash of chili powder...and I baked my meatballs instead of pan frying. Used the recommended recipe using beef Lemon Herb Turkey Meatballs/saved

    Wow, that looks so good! I love Italian Wedding Soup although I never have made it. I confess to buying Progresso but its my favorite "flavor" of soup! It does look like a lot of work but I'm sure its worth it!

    I agree Marie, baking meatballs is the only way I do it...too simple :) I made and baked the meatballs earlier in the day. The most work about this soup was washing and chopping all the veggies. Besides that, easy peasy :) :) I forgot to mention that I can't find in her directions when to put the wine in, so I added it a few minutes before the chicken stock.
