Was just about to make some no-bean chili when this recipe flashed up on the screen. Well.........It's casserole time!
A casserole with a southwest twist.
I could have baked it the full 40 minutes as 30 still let it fall apart too much.

I made this last night for dinner and it was delicious...I loved the addition of fresh tomatoes & the jalapenos gave it some heat and flavor..I'll be adding this to our menu often:) Very good post Corinne!
