Keni's Caprese Stuffed Pork Tenderloin

    When Keni posted this, I knew I had to make it. I always have these ingredients, including the tenderloins. This tasted fantastic. For me, it was quite difficult getting those tenderloins closed after stuffing them. After speaking several choice words I finally managed to get them closed. Maybe it was the beer or 3 before : )
    These were so worth the effort. Oh, and I didnt use the 1.5c of basalmic due to worrying it would be too vinegary. Used +/- 3/4c The flavor of the marinade was great and not overpowering at all. After reducing the remaining marinade, it was perfect. Great recipe, Keni. Thank you

    Sorry it was tough for you, but sooo glad you enjoyed it, MP. As I mentioned to you, that's why I only used half the marinade on the pork cus I was worried it would be too vinegary! :) BUt, I knew I wanted a significant amount of sauce, sooo hehehe

    A love the photo and you did a great job. A tenderloin is NOT easy to roll!

    Well, its a great recipe and that photo of yours is an eye catcher. Next time I will use all the balsamic. I barely had enough sauce for my rice. And y'all know how I like my rice : )

    Thanks, guys... that's why I posted it(and made it!) now, cus of the fresh stuff to use up. Same with my basal vinaigrette... needed somethin' to do with all that basil! :)

    Made this last night. Really enjoyed it. I too hard a hard time stuffing it. Ended up using some butcher's twine but it was a fight. :) Tenderloin came out juicy and flavourful and all the stuffing ingredients really complemented it. Again, a great recipe for this time of year. Thanks Keni!

    If y'all remember seeing "steeltown" around here just a bit, he's the reason this recipe came about. hehehe You know I'm always looking for inspiration and he just happened to mention, once, that one of his favorite things is caprese and how it should be a main dish, somehow...welll.....
