Keni's Chipotle Grilled/Broiled Shrimp

    I made this over the weekend. As most of you in IMI know, I LOVE chipotle. Im mean I dont just really like it. I LOVE it. When I open a can the first thing I do is dip a finger : ) YUM So, when I was reminded about this I went and bought shrimp. This was GREAT. I did use extra chipotle, just cuz I cant help it. And I brushed the remainder of the sauce on during broiling. I loved the lime and honey in it. This was SOOO good. Keni what can I say that I havent already told you??? Damn these were good : )

    Oh, and for the record, I really wish I would have made rice.........Shocker, right??

    By the way - watch out for more "theme" cooking as I'm working on using up the leftover chipotles in adobo. I also found out today I can get jarred adobo sauce with no chilies!

    What a great thread... nice to see, am so glad the recipe was tried and enjoyed. Gotta love those chipotles.

Added my pic... (sorry, I had a fight with my camera only wanting to focus on the peppers and onions, not the shrimp)

    Thanks FA! Right now everything I make will be replaced or made with lemons...our lemon tree is has about 75 huge lemons hanging off of it right now lol! It's only 4 ft. tall too, poor baby :)

I'm mainly just wanting to make that ginger chicken recipe, so that if it does turn out good I can at least throw some measurements into the comment section...I don't know that I'll use the baby corn, which I do like, just doesn't sound good in this recipe lol!
