Keni's Tropical Cloud Pie

    Tropical Cloud Pie
    I have never made anything like this before. I just happened to have all the ingredients on hand too! It's not very sweet, light and airy, perfect after a big meal.
    I used a graham cracker crust. But this would be so good with a ginger snap crust! Or even a coconut/macaroon crust. I used an 18 ounce can of crushed pineapple, and I'm glad I used the whole thing, seems a perfect amount. To make this more tropical I would add some lime zest, or even lemon. It needs that little zip of citrus. Otherwise a fantastic pie that I am sure to make again and again!

    Lol, Shona, I think she would be agreeing with you too! She was always tweaking the recipes she made and always threw out there for anyone to tweak hers to their liking :) This looks amazing! I bet the bits of pineapple were great in this, now I want some!
