Tropical Cloud Pie

- 1 chocolate, shortbread or graham cookie pie crust shopping list
- 8oz cream cheese, softened shopping list
- 1 small can crushed pineapple, drained very well shopping list
- 2 cups sweetened, shredded coconut shopping list
- 1 cup whipping cream with about 1-2T powdered sugar, whipped to create 2 cups OR 1 container whipped topping shopping list
How to make it
- Beat cream cheese well.
- Add pineapple and 1 cup coconut and mix well.
- Fold in whipped cream until well combined.
- Fold into crust.
- Spread remaining cup of coconut in a oven safe skillet or a cookie sheet and toast in a 300 oven for about 20 minutes, stirring about every 5 minutes or so. Be careful not to burn.
- Sprinkle the toasted coconut over the filling.
- Refrigerate a couple of hours until firm.
