How to make it

  • Beat cream cheese well.
  • Add pineapple and 1 cup coconut and mix well.
  • Fold in whipped cream until well combined.
  • Fold into crust.
  • Spread remaining cup of coconut in a oven safe skillet or a cookie sheet and toast in a 300 oven for about 20 minutes, stirring about every 5 minutes or so. Be careful not to burn.
  • Sprinkle the toasted coconut over the filling.
  • Refrigerate a couple of hours until firm.
