Luscious Vanilla Slice by Midgelet

    Back to report in on this one. Made this for a dessert last evening. I didn't make it to the gourmet market to buy the original wafer cookies called for---so I simply used Pepperidge Farms Chess Men instead. You will need about 1 1/2 packets for an 11x7 dessert Pyrex dish.

    I made the recipe "to a T" except for the cookie part!

    I have to say---this is creamy, rich, smooth and delicious. Definitely different than most run-of-the-mill desserts out there today. It was EASY to whip up (less than 10 minutes prep time) and then just put the lid on it--fridge it---and wait until it sets up!

    NOTE: MAKE SURE YOU COOL THE GELATIN PRETTY WELL BEFORE MIXING IT INTO YOUR CREAM CHEESE/BUTTER MIXTURE!!!! If you put the HOT gelatin water into the mix, it will "break," causing it to separate from the whey in the mixture. The taste will be the same--but the texture will be off.

    I'm giving this one a HIGH 5. Were it possible, this would get a 10! :-)

    I can totally see this being topped or filled with either raspberries, blueberries or strawberries before gelling up. Lovely.
