How to make it

  • Prep time does not include chilling time
  • Cream together the butter and cream cheese, add the gelatine which has been dissolved in the hot water.
  • Add the sugar and the vanilla essence.
  • Mix till dissolved and smooth
  • Cover a flat oven-tray with Aluminum foil.
  • Take the bisquits from one of the packets and place with the 'patterned' side down.
  • Then pour the mix over the bisquits, and spread it.
  • It will be very 'runny' but try to cover the bisquits without the mix running beyond them.
  • The mix will firm up considerably when cooling; also, it will 'cure' so that the sugar grains, which is easily disernible in the fresh mix, seem to disappear.
  • Then place the bisquits from the other packet on top of the mix,
  • with the 'patterned' side up.
  • Make certain that the top bisquit positions correspond fairly accurately with the bottom ones; if not, the slices will be a mess when you cut them.
  • Put the tray in the frige.
  • When chilled very well and firm, cut into individual slices.

    Back to report in on this one. Made this for a dessert last evening. I didn't make it to the gourmet market to buy the original wafer cookies called for---so I simply used Pepperidge Farms Chess Men instead. You will need about 1 1/2 packets for an 11x7 dessert Pyrex dish.

    I made the recipe "to a T" except for the cookie part!

    I have to say---this is creamy, rich, smooth and delicious. Definitely different than most run-of-the-mill desserts out there today. It was EASY to whip up (less than 10 minutes prep time) and then just put the lid on it--fridge it---and wait until it sets up!

    NOTE: MAKE SURE YOU COOL THE GELATIN PRETTY WELL BEFORE MIXING IT INTO YOUR CREAM CHEESE/BUTTER MIXTURE!!!! If you put the HOT gelatin water into the mix, it will "break," causing it to separate from the whey in the mixture. The taste will be the same--but the texture will be off.

    I'm giving this one a HIGH 5. Were it possible, this would get a 10! :-)

    I can totally see this being topped or filled with either raspberries, blueberries or strawberries before gelling up. Lovely.

    Translation into ounces equals:

    8 oz cream cheese (1 block)
    8 oz butter (2 sticks)
    1 cup sugar
    1 packet Knox gelatin
    1 teaspoon vanilla
    1 cup very hot water
    2 packs lattice wafers (gourmet section)
