Meatball Muffins

    I made these for dinner the other night, and they were delicious. The best way to explain them is that they are like a self-contained meatball sandwiches. Obviously this was going to be a winner with my husband, who loves meatball sandwiches. I invited one of my sisters over to watch the Top Chef Reunion and have dinner with my husband and me and we all enjoyed these.

    I served the 'muffins' with a nice green salad for dinner, and they went fast. After making this recipe, I visited the Rhodes bread site to see what other recipes they have. I can see I'll be busy! As strange as it sounds, I've never bought frozen bread dough until now, but I come from a family where everything is scratch-made. I had never had a need to buy dough when I can make my own! But I love the convenience of the frozen dough now that I've tried it, and the taste and texture are very close to homemade.

    I would definitely make these again!

    I forgot to mention, they are really easy to put together. There's even a video I found later on the Rhodes Bread website that shows you how to do it. Also, I found the rising time tbe spot-on.

    You beat me to it with this recipe!!! I have it in my 'make soon' file...probably in the next week or so! I always make my own dough also, but I have tried the frozen pizza dough a few times. I'll have to try it for this one!
