Mexican Chicken Lasagna

    Recipe: Mexican Chicken Lasagna

    I stumbled upon this recipe when I was looking for something different to make with chicken and was craving Mexican. This truly is a Mexican flavored lasagna! Note there are no amounts given for some ingredients and others give ranges. Is that a pass to do as you please? I only had a pound of chicken that I diced, not sliced, and 1 Tbsp. of chili powder was more than enough. For the cheese filling, I subbed 2c. cottage cheese because that’s what I prefer when making lasagna. To that, I also added about 1c. of shredded Monterey Jack cheese that I needed to get used. The chicken filling was soupy and I questioned how it would stand up when baked. Using a 9 x 13 pan, I altered the layering process starting a layer of noodles, then half of the cheese mixture, half of the chicken, a good cup or so of shredded Colby cheese, and then half a jar of chunky salsa. Repeated. I finished by adding a top layer of noodles and more Colby over the top. It was still a little runny in the end, but……Oh So Good! The seasoning was perfect for me. Hubby gave it two thumbs up!

    Note: Did not use garden seasoning, salt, or pepper.

    Your picture is waaaayyyy yummier looking than the poster's,( not to hurt anyone's feelings). Between the two cans of soup and the tomatoes I can totally see that it would be liquidy alright.
    I would like some for breakfast right now please. :)

    Thank you, Chuckieb! It would be good anytime of day. I tried looking at the photo to determine if the chicken layer was runny or not. Another half pound or so of chicken might help out with that, but I think it will still be runny. The photo looks like there are multiple layers of noodles and it didn't specify the quantity of noodles. I think you can do just about anything with this recipe and it's still going to be good!

    Thank you, Frankieanne! I'm with you on the canned cream soups and normally shy away from recipes that call for it. Every once in awhile I will find something that I can't resist.
