    This was a very good side dish for my chicken fajitas. My sister only eats brown rice so I cooked this for 60 minutes to accommodate that and it worked out well. It surprised me that stirring every 15 minutes would work, but it did. The only difference for me was I didn't have any white onion so I used red. The directions are a little sketchy but I assumed I was to saute the rice and onion in the canola oil, which I did over medium heat.

    I make one just like it except with fresh tomatoes instead of stewed and I do it all on the stovetop. The stewed tomatoes would make this save time...just plop them right in there!

    It was uncooked. It cooks in the broth and tomato sauce.
