Slow Cooker Chicken Fajitas

- 1lb. skinless boneless chicken breasts shopping list
- 1 medium onion, sliced lengthwise and then sliced 1/2" thick into "half moons" shopping list
- 1 pepper (your choice of color) seeded and sliced 1/2" thick shopping list
- 3 cloves of garlic, minced shopping list
- 1 - 14.5 oz Mexican style diced tomatoes shopping list
- 3 Tbs. taco or fajita seasoning mix, prepackaged or homemade shopping list
- flour tortillas (I used whole wheat) shopping list
How to make it
- Place the sliced onion and pepper in the bottom of the slow cooker See Photo. Put the chicken breast on top and sprinkle with the taco or fajita seasoning mix. Mix the minced garlic into the tomatoes, then pour over the top. Cover and cook on low for 7 to 9 hours. Shred the chicken breasts and stir into the onion, pepper and tomatoes and the juices. Serve with warmed flour tortillas and your favorite toppings.
