ML2C's Stuffed Santa Fe Chicken

    I made this several weeks ago. I absolutely LOVED this. At first it seemed like it would be too much work. (for me) The longest part was flattening the chicken. After that it was SO easy. I will be making this on a regular basis. Thinking about it now makes me want to make it again. If I had chicken thawed, I would be. Its taht good : ) Thanks ML2C for a FANTASTIC recipe

All I know is that I have to stock up on Panko if thats where the crispness came from. Didnt know there would be a diffrence in outcome. But even if it wouldnt have been qw crisp, the flavor was awesome.

    Sorry it took me a while to post this. Im just glad I still had the pic in the camera. Had it been on the PC, it would have been lost........along with any and all pics : (

    Yes, Frankie. I used a hammer. The "meat mallet" I purchased takes FOREVER to flatten, but its results are much more pic worthy. My old 3lb hammer did a much faster job. But there most likely would not be a pic had I used that : )
