This was as tasty as any panini I've ever had at a restaurant...and I see ML2C has already made this recipe and posted an IMI thread. But I'm starting another. :-O

In my opinion, it's the fresh mozzarella that really takes it up a notch. I used crusty french bread, cut it in thin slices, and then made two smaller sandwiches. I don't have a panini press so had to grill the sandwiches in my grill pan and used a Cuisinart Stainless Steel skillet (somewhat heavy) and two cans of tomatoes to add extra weight. Not quite the same but it worked pretty well.
