Nectarine Salsa

    I came across nectarines on sale today so I picked some up and just knew I was wanting to make some sort of salsa or relish to top grilled chicken since that was already planned for tonight. Came across this and it was fantastic and super fresh tasting! Used a yellow bell instead of read and I made it ahead of time so it would have plenty of time to meld flavors in the fridge. 5 nectarines would have made a ton so I only used 2 and kinda eyeballed everything else down to scale. Had plenty for Michael and I to have a heavy portion with our chicken plus enough left over for 2 more. Very yummy!

    Thanks! Lol Points, not sure how much cayenne I used but this does make a TON, so a Tbs. may not be too bad :)
