New Orleans Red Beans

    Going to turn cold for one more night tomorrow. This will fit right in with additional salt. All came out exactly to spec. Doubled the recipe but didn't have to double the water. Made this for lunch over yellow rice and toast. Served for dinner too with cornbread. Was quite a chore smashing the beans against the side of the pot. Resorted to a couple turns with an immersion blender to break up half the beans.
    Liked the mild pepper aftertaste.
