Oatmeal Pancakes

    Nice flavor. Used honey in lieu of maple syrup. And didn't have any coconut oil so I used some grapeseed oil.
    Optionals: Used flax seed and raisins.
    Used powdered buttermilk. Batter turned out a little thin but setting for about a half hour let the flax seed suck up some liquid and thicken up the batter.
    Didn't know whether the 3 oz was by volume or weight so I just used a ladle full which is what I normally use making a pancake.
    Made 2 pancakes, probably could have made 3. Buggered the first one up because the griddle wasn't hot enough.
    Cakes puff up nicely.
    Note on the oatmeal: Any type of oatmeal will be fine since it will all get blended up in the food processor and in effect become instant oatmeal.

    Those look differently delicious! I wonder how they would work with plain ol' milk. I hate to buy buttermilk for such a small amount.

    The buttermilk is needed to make them rise better. This recipe is exactly why I keep powdered buttermilk on hand.

    Frankieanne With plain ol' milk, just add 1/2 teaspoon of vinegar after you have measured your milk out and let it work its magic for about 3 - 5 minutes. You have just made the right amount of buttermilk for your pancakes.
