Oven Caramelized Onions

    Recipe by Midgelet: Oven Caramelized Onions/saved
    It's a good side. Pepper goes a long way. Be gentle with it in this dish.
    Liquid does not reduce down to a thick glaze but it does reduce to make the flavoring more potent. Had to simmer the liquid in a small pot for 8 minutes on the stovetop for the reduction after all the bake time.

    We can call it a root vegetable bake with greens.
    By no means am I a vegan. It just seems more and more I can afford meat less and less. But when that carnivore craving comes calling, a fast food joint is in my immediate future.
