    Oven Fried Fish
    A co-worker of mine brought me a fresh piece of lingcod that he caught off the coast not far from here. I don't know how much it weighed but I was very happy with the amount of bread crumbs in this recipe. Usually I throw away a bunch but not this time. I had a bit left and mixed them in with the leftover butter mix and put them on top. A really nice breading for fish. I used foil in the pan for a quick clean-up.

    Oh my, that looks delicious, Frankie! Nice that there was no waste of breadcrumbs, and the little extra gave it some extra crunch. I think using butter instead of margarine also added flavor. Boy, if you lived closer, I'd be over for dinner! With dessert, of course. ;)

    Great photo, Frankieanne! This is something we would like. Definitely butter over margarine any day! When we lived in Alaska we would go deep sea fishing every summer. Lingcod was one of my favorite fish to catch.

    I've never heard of Lingcod before so I googled it. LOL! It's also known as the Buffalo cod. It's been observed up to 60" and weighing 130 lbs!!!! Holy Lingcod Batman! :) Your fish dish looks deelish FA! YUM!

    Baked up to spec. Used the "on sale" white fish fillets. Added an extra Tbsp of breading. Also had with rice.
    Fish broke up too much when plating, so no pic.
