    Pancakes From Scratch

    All I can say is WOW! This will be my to go to recipe for pancakes from now on. They are so light, fluffy and tender. The only thing I did differently was add a teaspoon of vanilla for extra flavour. It made 5 good sized pancakes I would say about maybe 10 inches in diameter. They freeze and reheat just fine as well. I had one for lunch again today. Thanks for sharing Chefmeow:)

    Good instructions for getting a high rise pancake too. A hot griddle or pan is a must to get the most rise. Some folk drop the batter on the baking surface too soon because they start getting hungry. Have patience. Read a scripture or two. Make a drop of water or two do a dance across the baking surface.
    Good call on the vanilla. A little cinnamon and maybe fresh grated nutmeg would do too.

    I figured it was the extra baking powder that did it, Points. They did sop up lots of butter and syrup too! I had not thought about putting cinnamon in it as well. i might give it a try next time. My dad was the pancake king in our house and yes a good hot pan is a must.
