Poached Eggs With Roasted Asparagus And Truffle Oil

    I felt like having eggs tonight. I also had some asparagus. I did an ingredient search and found Poached Eggs With Roasted Asparagus And Truffle Oil

    This was filling, but only due to it taking me 5 attempts at poaching an egg, which was my first experience at poaching. 2 came out good, 2 not so much and 1 just a mess. Ate them all which made it filling : ) I didn’t have truffle oil, but I did have truffle salt which I used/tried for the first time. What a great flavor that stuff has. I did as the posted and had a glass of chardonnay. This all went great together. This was also a first at roasting asparagus. Made for a great light type meal

    Wow, that looks fancy, MrP! I've roasted asparagus before. That's the only way I do it now. I love poached eggs. That's my favorite way to have an egg but I've never tried them on asparagus. My mom gave me some truffle oil but that was about four years ago no. I don't even know if its any good anymore. I suppose I should dig it out of the cupboard and see.

    Thanks, Frankie and NP. It does appear fancy, but I was surprised how quick it actually was to throw together. Even with all the attempts at the poaching, from the time I pulled things out of the fridge to the time I was eating was about 20 minutes. It took me longer trying to decide what I was going to eat.

    Thanks, ML2C. The last egg turned out the best. Just before I put the egg in, I stirred up the water to make like a vortex and set the egg in it. I only did one at a time, tho
