Pointsevenout's Cornbread

    Preheat oven to 400*F1 c flour1 c corn meal2/3 c sugar1 tsp salt1 1/2 Tbsp baking powder1 egg1/3 c veggie oil1 c milk or buttermilkMix the dryMix the wetCombine wet to dry until just mixedPour into 8 or 9 inch square or round baking panBake for 20 minutes or until golden brown and the wooden pic test passes.

    Its not a posted recipe, so thats why I cut and pasted it from the recipe hew gave me!

    This is VERY good and soooo very easy! The only change I made was to use 1/2 the sugar and I only used 1 Tbls. of baking powder. I baked it in a bread pan for 35 minutes. I'm glad I only used 1/2 the sugar because it would of been too sweet! It was still slightly sweet but it would of tasted more like a corn muffin if I would of used the full amount of sugar. This is going to be the recipe I use from now on!

    It is supposed to be a copy cat of the Jiffy mix cornbread muffin mix. Mother likes it sweet, so I make it look like a cornbread loaf instead of muffins. She spends way too much money buying the muffin mix boxes. I'm trying to convert her.

    Not that I'm complaining, BUT, looks like your cornbread needed a little more time in the oven to bring out that golden brown color and looking at the center of the slice it is almost not done. Thanks for the picture.

    It does look light but I was afraid if I baked it any longer it would get too dry. I don't like crumbly cornbread. It was actually cooked perfectly in the center, but it just didn't brown on the outside...I don't mind though, because it tasted really good! I guess I could add some butter ontop next time, to make it brown while baking.
