    I have a problem with this recipe. There is not enough structure to the cake to flip it without pushing it around and crinkling it up like scrambled egg curds.
    On a medium heat, so as not to burn, per the destructions, it takes minimally 5 minutes on the first side and then you have to hold your mouth just right to get the spatula under the cake without damaging it too bad.
    Five minutes on the first side and three minutes on the flip side makes a questionably barely done cake. That's too long to worry over ONE cake to keep it from burning.

    These cakes are minimally risen like flapjacks. Made a pic for the recipe with blueberry jam. It has good flavor but that is as far as I am willing to go.

    I am considering increasing the flour content by 50 to 100 percent to try to put more structure in the cake for handling purposes for the remainder of the batter. Also adding baking powder for just a little more lift. The flavor should still be there.

    Solved all the trouble. Cake has nice rise and good handling at just a little over 3 minutes.
    You'll have to figure out the flour addition ratio. I was working with a partially used batter.
    For my situation I used a half cup additional flour with a teaspoon and a half of baking powder and a half spoon salt. Made very fluffy cakes. Cakes browned a little more than a normal cake but not in the burnt category. Still using a medium heat.
