Porcupine Meatballs

    Meatballs were moist and the rice cooked perfectly. I did add 2 tsp. of bottled bbq sauce to the finished sauce because I thought it needed more tangy flavor. But that was my person taste. Easy and nice comfort food.

    Yes, Mr. P, after the meatballs are cooked the rice does stick out a bit like little porcupine needles. You got it! :)

    Made these tonight and they were SO GOOD! I copied cheryl and added a little bbq to the sauce and spiced it up a little with some garlic powder. You definitely need some salt at the end too. I loved that these were done on the stove top and not baked. I cooked mine about 45 mins and they were done perfectly. Also next time I'm gonna double up on that sauce cause it looks like a lot at first but it cooks down real quick! I've always wanted to make these and glad I did! Posted my sad little no natural light pic. too ;)

    i agree with ml2c i will double the sauce next time because when we reheated the leftovers i definatly wished for more of the delicious sauce.

    Thanks for the great comments! I'm so glad you enjoyed this recipe. I've tried several, and this one was by far the best. The first recipe I tried cooked down so much, the meatballs never looked like porcupines at all, and I didn't understand why they were named that way. They're pretty funny when it works right!

When I told my daughter I was making porcupine meatballs she was like ewwww I dont want those! But then I told her what they were and when she saw them she laughed so hard! THEN she ate them and said she loved them and as everyone knows she the little food critic, so that's a HIGH compliment ;)
