Porcupine Meatballs Recipe
We usually just call these Porcupines. They are great-tasting and fun to see! This recipe is so good, I didn't have to change a thing. I got it from a Country magazine years ago.

Ingredients
  • 1/2 cup uncooked long grain rice
  • 1/2 cup water
  • 1/3 cup chopped onion
  • 1 tsp salt
  • 1/2 tsp celery salt
  • 1/8 tsp black pepper
  • 1/8 tsp garlic powder
  • 1 lb. ground chuck
  • 2 Tablespoons oil
  • 15 oz. tomato sauce
  • 1 cup water
  • 2 Tablespoons light brown sugar
  • 2 tsp Worcestershire

Directions
  1. Combine the first seven ingredients.
  2. Add beef and mix very well.
  3. Shape into 1-1/2" balls.
  4. In a large skillet, brown meatballs in oil; drain.
  5. Combine rest of ingredients; pour over meatballs.
  6. Reduce heat; cover and simmer for 1 hour.
  7. Don't eat them with mashed potatoes!
