    Porcupine Meatballs
I saw this wonderful recipe by Semi the other day and knew that it would be a great recipe to go with the Beef Noodle recipe I was doing. Family loved it will be making again.

Oh man this looks good! I've made porcupine meatballs a couple times and it goes over really well with my family. It looks like Semi used a creamy tomato soup? That would be delicious!

Yes I think Semi had used a creamy tomato soup. I remember she had mentioned that she had several containers to use up so I think that is one of the ways. Oh is was sooo good. DS#1 took some for lunch but since I double the recipe was able to freeze two separate lunch/dinners one with leftover tatters and the other with leftover rice.

Nadine I am so glad you and your family liked this recipe. I do to and remember mom making it when I was growing up. it was a new one for her.

The only porcupine meatballs I've ever had used Minute Rice. This looks like a good one to use up some leftover rice or make extra just to make the meatballs.

Just to help. I use one of these to help with uniform size and speed of making the meatballs. you can get any size you like and it really speeds up the process.
