Pork Tenderloin stuffed with spinach and feta

    Pork Tenderloin Stuffed With Spinach And Feta by pkusmc
    This is delicious! We all loved it! I really liked the balsamic in this, it went really well with the feta and spinach! Yummy! The picky teenager went back for seconds, so you know it's good! lol ;)
    I added the garlic and celery seed to the top of the meat before searing ( I think that's where it went) and instead of wine I used some leftover chicken stock I had for the pan sauce. All the seasonings were perfect and I don't think I'd add anything else to it!
    I also added some potatoes to the roasting pan and they cooked at the same time. I used the same dressing I tossed my greek salad in on the potatoes. I used a lemon, balsamic, olive oil and greek seasoning for the dressing to play on the balsamic flavor. Overall a great supper!
    I'll definitely make this again!

    Here's the recipe I use for Greek Salad. Greek Salad With Lemon Viniagrette I used half the lemon juice for balsamic vinegar here. And left out the lettuce, but I usually like a little lettuce in my Greek Salads. :)

    I'm excited that you tried it. Even more excited that you all liked it, haha. I realize that I didn't specify what the garlic powder and celery seed were for...you're right, I rub it on before searing. Changed it in the recipe page, so thanks for that!
